A popular root vegetable, creamy white parsnips have a sweet, nutty and earthy flavour. Parsnips are served cooked. They can be boiled or roasted and served as an accompanying vegetable or included in stews, soups, mixed root vegetable purées or vegetable bakes.

Parsnip Facts

Before the introduction of potatoes from South America, roast parsnips were the traditional accompaniment to roast beef. In the past they were included in sweet dishes such as cakes and jams before sugar was widely available.  A typical 100 g parsnip contains 75 Calories (230 kJ) of energy. Parsnips are rich in vitamins and minerals and are particularly rich in potassium with 375 mg per 100 gm.[18] Several of the B-group vitamins are present but most of the vitamin C is lost in cooking. Since most of the vitamins and minerals are found close to the skin many will be lost unless the root is finely peeled or cooked whole. They also contain anti-oxidants such as falcarinol, falcarindiol, panaxydiol and methyl-falcarindiol which have anti-cancer, anti-inflammatory and anti-fungal properties. The high fibre content of parsnips may help prevent constipation and reduce blood cholesterol levels
