A ripe avocado will yield to gentle pressure when held in the palm of the hand and squeezed. The flesh goes brown quickly after exposure to air. To prevent this, lime or lemon juice can be added to avocados after they are peeled. The fruit is not sweet, but rich, and distinctly yet subtly flavoured, and of a smooth, almost creamy texture. It is used in both savory and sweet dishes which is why we have listed it as both a fruit and vegetable/salad item. Avocados are sometimes called 'Alligator Pear' especially those varieties that have darker skins and 'knobbly' skin texture.

Avocado Facts

Avocados provide all 18 essential amino acids necessary for the body to form a complete protein. Unlike the protein in steak, that can difficult to digest, avocado protein is readily absorbed by the body. The avocado is therefore very popular in vegetarian cuisine, as substitute for meats in sandwiches and salads because of its high fat content, which is of the healthy mono-unsaturated kind. About 75% of an avocado's energy comes from these fats, approximately 67% of total. They are also an excellent source of carotenoids of high quality vitamin A.
